A quick note about our name:
Pharos
(pronounced Fah'-ros) is the Greek word for lighthouse.
Lighthouses are beacons of light that guide sailors.
We love that this word touches on our family heritage, while
giving a nod to the number of historic lighthouses to be found on
the Bruce Peninsula, such as in Big Tub Harbour, Cabot's
Head,
Lion's Head Harbour, Cove Island, Flowerpot
Island and
Cape Croker.
This definition also has
personal meaning. Although we opened The Tobermory Princess Hotel
and dining room in 1999, our family's hospitality service in
Tobermory actually began in 1977, when Jim and Bessie Kritikos
purchased and operated a different business - The Lighthouse Gas
Bar & Take-Out. After 10 years of fueling cars coming off the
Chi-Cheemaun, and selling thousands of pizzas, they transformed it
into a dining room in 1987, and ran it, along with their four
daughters, for another 25 years.
This establishment
introduced locals and tourists to many of Jim's classic
dishes, such as his savory souvlaki and beautifully seasoned
Georgian Bay whitefish.
While we bid a bittersweet
good-bye to The Lighthouse Restaurant in 2011, we are excited to
pay it tribute with this dining room's name, and continue our
tradition of providing a beacon of light - and a nourishing meal-
to all who make their way to Tobermory.
